Eggplants, okay to eat?

Hi all,

I didn't get to my eggplants in time and they seemed to have *just* lost their shininess. Do you think they are still okay to eat? I was thinking of making babaganoush with them.

The reason I think I just missed their shiny stage is because a couple still have shiny spots (larger than 2 inches in diameter).

I've grown eggplants of varying types every year and my feeling is until brown blemishes start showing up on the skins like bruises, they are good to eat.

The outer skins of some of my eggplants looked horrid this year due to insects and drought stress but the inner part was fine. However, the longer you let them go on the plant, the bigger and tougher the seeds seem to get on the inside. Still edible, just a bit mealier in my opinion.

gonna try to do that from scratch as well! er, a modified version from a restaurant I used to go to as a kid. We're not near one now and I miss their flatbread/pita. Found the recipe online :)
