Bolting Turnips.... will they still harvest?

So its been in the 90s for days now any my turnips are starting to bolt. Will they still harvest? I've been chopping the flower stalks when they start, They still look good but they have no shoulders above the ground yet.

Any experiences?

All of the root crops go downhill in quality very fast once thy decide to bolt. Best to harvest now because they won't get any better.
