Texas (zone 8) school garden - When's best time to plant?

I teach first grade in east texas (zone 8 ). I would love to do a raised garden outside of my classroom, trying to teach the kiddos about growing food and healthy choice but am wondering when the best time to try it would be? our school year goes from august - june. any suggestions would be very helpful!

you've got time to prepare to grow a fall crop if you plant soon after the school year begins. brussels sprouts broccoli carrots radish

you can also do the same thing in the spring. alot of things will mature way before and into june so they will be able to see it.
