Garden5 that's a good question, one which I can't truthfully answer. All I know is that as a beginning gardener, I watched my new green peppers change from what I thought was them being sun scaled. I noticed that the texture of the peppers remained firm so for whatever reason I decided to just go with it and see what would become of them. I thought sharing this would be helpful in case anyone else shared a similar experience with unfamiliar territory! My plans are to harvest these when they are completely red.
