Flower pinching?

I have a small vegetable garden and I grow a variety of vegetables. I have expansive clay soil. I planted some of my plants from seeds, and bought others as small and transplanted them.

All of my plants are starting to flower and produce vegetables, this concerns me because they are still very small.

What causes plants to flower so early?

Does pinching off the flowers work for all types of vegetables, or should I only do it to certain types? Any other thoughts on pinching off the flowers?

What variety of plants :?: Stress and or heat can cause flowering.

I have several types of peppers, several types of tomatoes, green beans, squash, zuchini, and cucumbers. All of these plants are flowering and starting to produce.

It has not been really hot here, so maybe stress caused it.

this being said should I pinch off the flowers and the vegetables currently growing on the plants until they grow larger?
