Collards

At the end of last season, I beheaded my collards and left the stem. This season, I have leaves sprouting from the stem. Will these be full size leaves to be eaten of should I dispose of the plant?

They will be edible leaves, size to be determined, until the plant decides to flower and bolts up a flower stalk. Collards are a good trap crop to draw cabbage worms away from other cole crops. Cabbage butterflies prefer to lay eggs on the collards first, and broccoli, cabbage etc second. so leaving in early plants would be useful.
