Your probably right. The yellow squash would do a really good job in the Jamie Oliver recipe. I didn't have my glasses on when I looked at the recipe, but it looked like he did use courgette (zucchini) instead of yellow squash. I'm not a big fan of the taste of courgette compared to yellow squash. It doesn't seem to retain it's identity as well when cooked as squash.

Yeah your right...I use some summer squash...yellow crockneck when I made it...man was it good! Anyway, I think Jamie also used yellow squash (summer squash) as well.

I also have the white scallop or patty pans or peter pan squash, those grow pretty fast actually....same with the yellow squash.

Nes, it was pretty funny :lol: Don't apologize!

Here's that pumpkin cookie recipe. (It took me a while to find it.):

2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp cinnamon
1/2 tsp. nutmeg
1/4 c. ginger
1/2 c. margarine
2 eggs
1 c. pumpkin
1 c. raisins
1 c. walnuts

Drop and bake 10-12 minutes at 375. Frost with quick caramel icing.

Quick Caramel Icing:

4 Tbsp. butter
6 Tbsp. cream or top milk
3/4 c. brown sugar
Approximately 1 3/4 c. powdered sugar
1/2 tsp. vanilla

Melt butter in a saucepan. Add brown sugar and melt again. Add cream and allow to boil vigorously 1 minute. Remove from heat. Immediately start adding powdered sugar, beating well. When cooled slightly, add the vanilla. Continue adding powdered sugar until frosting is of a consistency to spread.

(Note: Do not offer these to Stella. She will pitch a fit.)
