When do I harvest peppers

I have pablano and yellow bell peppers. They are getting large but I am not sure when I harvest them, do I wait for them to change color or does that process happen after I cut them off the plant ?

they won't change color after picking. if you want the yellow yellow or the poblano to ripen to red, leave them on until they change. if you're happy with them green, sooner's possible.

Thanks, I'd prefer yellow and red so I guess I'll just have to man up and be patient.
