When to harvest wheat?

We got some wheat grass a while back. It was organic, so we tried planting it. Its been growing really well for a little over a year now.
How ever, since its putting out so many seeds, we want to collect them.
:T but I have no idea when to harvest them.
As you can see, we need a little bit of help. Pictures would be nice.

Remember the words of the song, "amber waves of grain"? After it turns amber and the heads are dry. Pick a head and rub it between your hands to thresh it. If it threshes out good, it is ready to harvest.
