Ok The Cauliflower was laying down but now it is straight up in the air is this good or bad. help...

Soil looks a bit on the dry side, but maybe that's just how the soil looks where you live. (Do take that observation with a grain of salt. I haven't planted anything in the ground for over 25 years. I garden only in containers these days. )

If it was laying down because the whole plant is a bit floppy, you might want to pile some more soil around the stem (this is called "hilling"). Sand works even better because the particles will sift down into gaps that form from the side-to-side movement of the plant. The plant's only going to get more top-heavy as it grows.
