Whats Eating my Veggies at Night?

I have planted spinach, swiss chard and some other veggies, and they are being eaten off. What is doing this??? I saw not sign of any insects. We don't have a slug or snail issue here. There are some buildings with a few mice??? Someone said earwigs may come out just at night and dine - is this true or does someone know what else I should be thinking of.

How much is being eaten - whole pieces? holes? Description of damage tells a lot.
Maybe a photo would help.

Sounds like cabbage loopers to me. Try some BT.

I know I have a problem with birds eating my new spinach leaves. My seeds just pop up and the next day the leaves are missing. I'm sure it's the birds. I have planted some more in a container that had been eaten, and put plastic wrap over it to give the spinach a chance to grow a bit. I think I'll get some shiny windmills as well to try to keep the birds away. So far so good though! The new seeds have popped up and are growing, the birds have stayed away so far.
