when to harvest acorn squash?

all of my different plants grew fast and furious. they produced quickly. problem though I had a huge acorn squash that I thought was ready due to its size.when I cut it open it was yellow. it didnt taste too bad but shouldnt it be orange?

I have had various squash where the "meat" isn't very dark, it should be fine, if you want to lessen the strain of the vegitable on the plant by picking it you can always let it sit on the counter for a few days, they stay good for a while. I wish I had as good as luck with my squash
