What's Eating My Peppers?

I have some green peppers, jalapenos and yellow banana peppers growing, and this morning I just realized the leaves are completely eaten off of a couple of the plants but I didn't find a culprit. I do organic gardening for the most part but I need to get rid of whatever is starting to munch on all my plants. Any advice?
What are the safest weed and bug killers?

By far the safest weed and insect killers are your hands.

In this instance, your description seems to point to an animal rather than an insect if the damage occurred overnight -- unless you have some hungry bugs in Florida.

First order of business might be to post some photos here and see if someone can recognize the possible culprit. Any control measure begins with proper ID.

Latex or kitchen gloves might alleviate some of the ick factor?
