Best way to encourage multiple shoots of dragonfruit plant?

Does cutting off the stems kill a dragonfruit plant? Mine has a central 'stem' growing roots along the brick wall. It's almost touching the roof! I don't want the plant to reach all the way up, but to start branching outwards. What is the best way to encourage that?

The bottom 'stems' are quite short and aren't climbing onto the wall either.

Someone suggested to just hack off the central stem, but my concern is would that kill the plant? Or would it just send out other 'stems'? If cutting it is the way to go, where is the best spot to cut to encourage further (lateral) growth?
