compost potatoes?

can I compost potatoes? or do they start growing in the pile? could be a dumb question but just curious.

Sometimes they start growing in the pile, but if you keep turning the pile, they won't have the chance to grow, die, and eventually break down. Also, potato foliage is sensitive to frost so there's not much chance that anything will grow during the winter. People do report potatoes sprouting in the compost in spring and letting them grow to produce bountiful harvest in the summer, but if you do that, you won't be able to use your compost. :wink:
