Part of the Hydrangea has grown through a trellis, and I want to remove the trellis.
Do I cut Hydrangea?
Do I cut the suckers?
Do I pull the suckers off the Trellis?

I prune mine occasionally when it trys to cover the window in my garage. The plant never seems to suffer from it.
It's a little stubborn to remove from things it's attached to. If you can get the branches free without breaking them, you could redirect them elsewhere. Otherwise, I would prune as needed.
