Am I picking the right thing off of my chives?

I'm growing some common chives in my vegetable garden. I've read that you don't want them to flower or you get less leaves and the leaves become less tender.

For a while now I've been picking off many purple cone shaped buds. It that what I'm supposed to be picking?

Those flowers are yummy too.

If your chives are getting stalky, ankle prune them short, water well and they'll come back.

I actually don't eat very much stuff from my garden. My apartment building is elderly people, and I'm getting there myself. I give the stuff to them and to the local food pantry.

I do cut the chives down to 2 inches. But I transplanted them a month ago and the leaves aren't quite ready yet. Still a bit thin.

You're right, I should have been eating all those buds.
