Lemongrass, using

I have questions on Using Lemongrass. I have several doing well in containers, sending up pretty green leaves/blades. (I got the starts earlier this spring) For those of you with it, do you use the leaves, or just the stalks? It will take while before the stalks spread and ready to harvest. The leaves are very lemony and fresh.

I usually just use it in thai type dishes and just use the stalks.

I think you use just the lower part of the stalks and the other stuff you can make tea with.
