How do I collect coriander?

My cilantro plants are going to seed, and the seeds are still green. I want to save some, but also plant some to keep inside over the winter. I love me some burritos :lol: To collect the seeds, should I remove the seeds when they're green on the plant and dry them out, or collect them after they've dried out on the plant?

wait until they are pretty dry, cut the plants at the base. put into a pillow case and hit with a stick, your hand, whatever you got. then winnow the seeds to get rid of the chaff. now you have coriander left to eat or plant
