Thyme question--HELP PLEASE

Which thyme variety has the sturdiest stems that makes 'peeling' them easier. I've grown the English and French--both flimsy stems make for difficult leaf removal.

Saw this on a cooking show...if you're making something like soup or a sauce, just put in the thyme, stems and all. As it cooks, the leaves will cook off and you can easily remove the bare stems. It seems to work for this purpose.

Lemon Thyme has a very sturdy stem and it is VERY easy to get the leaves off ;) and it's scent is AMAZING!!!
