Pinching herbs

I know I should pinch off the basil when it has 6-8 true leaves. What about thyme? I have several seedlings that are 3-4 inches high now. They're strong, not spindly, but just throwing out sets of two leaves. Should thyme be bushy?

there are different varieties, some grow bushy, some like a carpet creeping low. I hard trim mine in spring getting rid of all the older woody stems.
Since yours are just seedlings, I would pinch them back to encourage branching. :)

When small I pinch enough to cook with, without being ruthless, and as they get bigger can take off larger amounts.
