Moving potted plants?

I will be moving this summer but couldn't help myself from planting a few herbs in containers. Is it possible to move potted plants a couple thousand miles and still keep them healthy? How would I transport them and keep them hydrated in the back of our SUV?

They should be fine so long as they are watered and not left to bake in the sun.

Feed them with an organic source of phophorous to harden them off a little before transport though. Meaning something that is a little higher in P than N and K (potassium) not just pure phophorous.
