Alocasia Polly or Elephant Ear - How to repot?

How do you repot an elephant ear? I have one with 10 leaves that I fell it needs to be repotted. What type of soil should you use? When repotting should you get rid of all the old soil around the roots?

I wouldn't remove the old soil, unless it's infested with insect pests of some sort. In general, when repotting, you want to treat the roots as gently as possible, to reduce transplant shock.
