novice container gardener

Hi

I am emailing for some guidance or advice on starting my own organic vegetable container garden. I am moving homes and I would like to grow my own veg so figure the best way to do this is to use containers.
I am a complete novice, so any advice or links would be great.
What vegetables and herbs are best in containers?
What sort of containers should I use?
And when is best to start planting - its mid winter in Ireland right now? How do I protect against frost?

Any help is welcome!
Many thanks

I have grown tomatos, eggplant, peppers, basil, parsley in very large pots with good drainage. Here in New York I start seedlings in the house in March and then transplant after the last frost which is in mid to late May.
I have always used plastic pots. Hope that helps. My Mom's family was from County Cork. I always wanted to visit but never got the chance :) Your in one beautiful country....
