pruning apple, peach, pear, and cherry trees in zone 6

Hi I live on a small farm in CT and it used to be a peach orcherd but now we have a mix of everything. my dad thinks that we have to make the trees like a umbrella shaped shell type thing. is this right?

If you are trying to bring back older trees that have not been pruned for several years don't try to accomplish everything in one year. You never want to remove more than 1/3 of the canopy in a single year.
