Prune grape vine during growing season?

My Interlaken vine is in its second year and growing well. I pruned it according to Sunset's guidelines (similar to what Gnome referenced in [url=https://www.helpfulgardener.com/forum/viewtopic.php?t=37272]this thread[/url]) except that I was a little late. It was more like spring than winter.

Anyway, I've got a few big shoots that aren't well-placed for trellising and I'm wondering if I can cut them off now, or if I need to wait until the plant is dormant.

It's pefectly safe to cut your vine now.
Vines are inclined to grow too much extension growth dureing the season and it helps the vine if you give it some control.
Growers often have to remove a lot of growth before harvest so that the fruit gets good light for ripening.
What you may get is a re-growth at the point of the cut.....but that is harmless.
