Fading cherry tree

I have a dying sour cherry tree with what I think may be bacterial canker. From what I understand, there's no cure for it, and the cherry tree will eventually die completely and have to be chopped down. Already several branches are dead, and it seems fewer leaf out and bloom every year.

I have some questions. Can I plant any tree where this cherry tree was? Do I have to wait for x number of years? Could I plant a fruit tree or another cherry tree in its place? It's in a good spot for a fruit tree. Lots of sun. If I wanted to plant an apple tree there, I have a crabapple across the yard to act as a pollinator. I'm also thinking about planting a plum tree. Then I could make my own plum wine.

I have a peach tree about 20 feet away that looks fine and produces peaches most years. (This year a hard freeze hit it, and it never bloomed.) What can I do to make sure that the peach tree doesn't get infected?
