Sour Nectarines and Plums

We live on a small farm close to where the bush fires were in Australia.
We have a small orchard that was ravaged by 43 degree celius heat over 3 consecutive days.
Much of the fruit from trees were badly burnt by the sun and hot dry winds.
Rippened fruit that we could save was very sour.
Previous year fruit was nice and tasty.
Can someone suggest what can be done to ensure future fruit will be sweet?
Someone suggested Epsom salt.
