I have a treeline in my backyard that defines one of my borders. Now has come the time where I need them trimmed WAY back, but the problem is that it only sprouts "leaves" at the ends of the branches. If I have these trimmed back, all of the branches will be bare. My question is, will they grow "leaves" back next season? And what kind of trees are these?

Your pictures are not very clear or close up, but it looks like your trees are some kind of evergreen like juniper, yew, cedar, etc., that have needles not leaves.
If that is the case, you have to be very careful about pruning them. The portion of the branch closest to the tree loses its green needles as the tree matures and never regrows them. If you cut in to the "dead zone," you will just be left with a bunch of bare branches and it will not regrow.
