What should I plant? (S.W. Ontario, Canada)

I live in south western Ontario, Canada and want to plant a living privacy fence around part of our lot.
We want something that:
- will stay thin and not bush out
- 10' - 15' max height
- shallow roots, as part of the fence goes over the septic system.
What should we plant???

Alternatively, are you able to use a trellis along that length? And plant vines or creeping plants along it? Might be an option that you could trim back to stay thin, but I suppose it'd take building a fence of trellises first, maybe not feasible.
