Privet Roots

When fixing up new steps in my mums garden recently I had to cut down a large privet hedge - it was very old and patchy anyway so she wasn't too upset - The problem is that I know the roots are supposed to be very deep and am unsure whether I could remove them by myself?
Also now that the steps are in place I would like to plant something where the hedge was because it looks a mess :oops: But I have heard that privet can make the ground acidic.
Does anyone have experience of removing the roots? Or about what plants I could use :?:
