bougainvillea problem

Hi all,
Newbie to forum and Florida and wondering what to do. Last winter was way coooolder than normal and my bougainvillea plant died back. It hadn't been trellised by the former owner so this was a good time to do so. After cutting back severely the plant has rebounded well but is currently 5ft tall (tallest shoot) and still growing. How tall do I let it get and when will it flower? I have trimmed back the tallest shoots a couple feet to stall until I can get an answer. Help!
