I just recently picked my tomatoes, for fear of losing them to a second frost. While theyâ€™re all beautifully green, I decided to ripen them in paper lunch bags and then core/freeze them later. My question is, how long does it take for tomatoes to ripen in this fashion? I'm away for the long weekend and would hate to come home to spoiled tomatoes. I'm almost considering taking them with me if they ripen too quickly, lol. I bagged them on Monday if that helps at all.
