I keep finding tomatoes that look like this but I have gone out at night to look for hornworms and never see any

Possibly birds. But possibly nothing. Have you had a bunch of rain lately?
Sometimes if the tomatoes have not been well watered and then they get a whole bunch of water (e.g. big rain storm) all at once, they can't expand quickly enough to accomodate all the water they take in and they just split.
The good news is your plant is looking really healthy!
