How far do you cut it back?

You are close enough to subtropical for that to work. In the north, it won't. farther north if the plant is in a pot you can try to over winter inside and then cut it back as you discribed and often it will bear again. As you might know tomatoes, and eggplants are perennials in the subtropics, we grow them as annuals, because we lose them to frosts and freezes in the states.
