decided to pull up one of my cucumber plants

quick question should I remove the roots of the last cucumber plants that was in my container. or leave them and hope they turn into nutrients for the next plant.

I usually start with new potting soil and put the old one in the garden. I find the roots clog up the pot and block drainage and I haven't gotten good results reusing the soil. It is hard to know what nutrients I need to replace. As the roots rot, they get fungus growing in the soil and it takes up some of the nitrogen in the process. The soil gets more acidic as it ages and most of the root plants prefer more alkaline to acidic conditions.
