I went to a chili cook off contest once 25 years ago, they did not allow beans in the chili. I am sorry but chili with no beans is NOT chili to me. So called Texas chili with a ton of beef and NO beans is not even close to chili.

My Chili Recipe

3 pints of fresh garden tomatoes sliced and diced.
1 lb of extra lean ground beef
1 very large onion
2 cans of dark red kidney beans
2 large tablespoons of chili powder = about 4 level tablespoons
1 large tablespoon of cumin = about 2 level tablespoons
1 large tablespoon of dark brown sugar = about 2 tablespoons
2 tablespoon of soy sauce
3 large cloves of garlic, more if you like garlic
1/2 teaspoon of red pepper, more if you like it spicy hot
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 to 1 teaspoon of hersheys cocoa powder
1 bay leaf

Cook the ground beef, onion, garlic, chili powder, cumin and 2 pints of tomatoes until the meat has cooked. Add all the other incredients including the other pint of tomatoes. Cook until onions are done about 45 minutes. Stir often so it does not stick to the bottom of the pan or burn. Cook on low heat with a lid on the pan so you don't boil off too much water. If the chili becomes too thick add more tomatoes and cook another 10 minutes.

I really don't have an exact measurement for the chili powder and cumin I put in about 1/2 what I listed in the recipe and I taste it as it cooks. I add more and more as it cooks until I get the flavor I want. Be careful not to get too much. There is a point where the flavor gets just right.
