Will rocket plant grow back from roots?

Hello friends!

I sowed a row of rocket plants which we have nearly harvested all of (it did not have a chance to bolt before we ate it all).

My question is: will it grow back even though it's harvested right down to the soil, or shall I dig out the roots and sow again?

Please guide
