I tend to eat the greens when they are tender. I like to chop them up and freeze them for when I have no fresh green onions. I have just realized that the bulbs can sometimes be bitter, but am not sure if it's a harvest timing issue....

I used some of the bulbs in a batch of kimchi and now the kimchi is bitter (I thought the rest of the ingredients will overcome the bitterness, but nooooo. :? ) I read that bitter kimchi will mellow after fermentation cycle is completed so I'm hoping the pickling process will help. If it does, then maybe I could pickle the bulbs using other recipes, too....
