plants that need freezing?

Hey there everybody, its my first post.
I'm doing an experiment to see the growing rate of a plant as the time the seed was frozen for changes. I was wondering what species you guys would recommend? it would have to be a reasonably small seed and easy to start growing too.
Any help would be great, thanks xD
