2011 plans-what are you growing?

I have narrowed my selections down to: lettuce, spinach, herbs(basil,cilantro, and chives for sure), and swiss chard in one bed. Peppers (hot and sweet, though my hot did NOT turn out well last year...), tomatoes of several varieties, beets (also a failure from last year), zucchini, yellow squash (only one plant!), beans(still deciding between bush, pole, or both), a handful of cucumbers, broccoli, cauliflower(a first!), and brussel sprouts, also a first for me. There will also be strawberries, raspberries (thanks to my hubby! More on that later), and once again will attempt watermelon.
Have you guys planned everything out? I still have to choose between a few varieties though, and decide what kinds to get!
What's everyone else growing this year?

I generally plant many of the same crops each spring. Bell peppers, several hot pepper varieties, eggplant, zucchini and yellow squash, some variety of pole beans, soybeans, tomatoes, cucumbers, some salad greens until the heat gets them and by then, okra for a long season of harvesting over the heat of summer.

This is the first year for a new raised bed and it is now full of garlic, onions and chives. It will be a while before it is cleared out since the garlic won't be ready till around June. Then I'll have to decide what I can put in there that will live with 95+ heat and humidity on a daily basis for the next 2+ months.

I grew BEAUTIFUL eggplant last year. But we didn't eat most of it :?
If I'm gonna grow it again, I need more recipes.

Fried eggplant is the old standby but I also like eggplant parmesan, eggplant casserole with shrimp and lots of cheese. A quickie is a medley of grilled eggplant, zucchini and okra in the summer. PM me and I'll give you the recipe for my casserole---it is killer. The parmesan recipe is pretty basic and most follow a veal parmesan recipe but substitute eggplant for veal.

Ok, so maybe I'll grow eggplant again.....
I wonder how the hubby will feel about giving up another huge chunk of yard in exchange for garden..... :lol:

Grow more eggplant! I like the Japanese style best, with Ichiban my favorite (so far) variety. I grill everything and my most often way to cook eggplant is on the grill. Slice lengthwise in half. Brush with olive oil. Season with whatever you like. Grill till soft. Enjoy. We eat these along with many other grilled veggies 3-5 times a week.

Lau, so do you eat that Japanese style with a bit of fresh Ginger root juice (grated and squeezed) and soy sauce, topped with shaved dried bonito?
