Hi,
I wanted to know if there was a way to grow a gardenia bonsai right from a seed rather than buying one from a (online) store?

Sure - if you want to spend 5-10 years doing so.
BTW - 'bonsai' are not simply 'grown from seed'.
Plants and trees grow from seed. Bonsai can be developed from these plants and trees after several years of size reduction and much styling, not to mention 'keeping them alive'!
Rather than buying online - without seeing the actual plant firsthand - try to locate a bonsai nursery near you and shop there instead. You will see what you are getting and can ask questions/get advice from the grower.
