I'm new to bonsai and have just bought my first.
So far seems to be good.
I have a shoot growing in it, I'm not sure if I'm supposed to cut it or not?
also do I need to feed it with anything other than water?

As far as pruning goes we need more info about your tree, As well as what your goals are for it.
A picture would be most helpfull here as well as some other information.
