Italian Cypress
Is it possible to make a bonsai of it? I mean I know you can do it with almost all plants but will it still look bonsai?

Josh,
I was not at all familiar with this species but a quick check of Google images searching for the term Cupressus sempervirens did indeed turn up several good specimens. So, I would say yes, they can be used successfully.
