Bamboo bonsai?

could I make a bonsai out of bamboo? and if so could I use lucky bamboo? an how.

First off, lucky bamboo is not a bamboo, but a type of dracaena. Because it doesn't become woody, it would not work well for a bonsai. One can bonsai regular bamboo, but it doesn't look like the conventional bonsai. You could try to bonsai a woodier species of dracaena though, like Dracaena deremensis 'warneckii compacta', which has small leafs, or Dracaena marginata, which can become quite woody with age.

About all you can do with Lucky Bamboo is make it curve. Not sure exactly how it's done, but I've seen countless examples of curved Lucky Bamboo
