You have to use a dormant scion onto a growing base.
A layer of grafting wax painted over the girdled wound may help retain water and stop pathogens from entering the wound ..while giving it a chance to start producing fresh growth around the damaged area.

Girdling a tree by deer or rabbits can kill the tree. It all depends on how much of the cambium layer has been left intact. The original Bramley Apple tree was planted in 1803. A hundred years or so later it was blown over in a gale. Luckily one of its branches propped it up on its side and that branch rooted into the ground as well. Sadly fungal infection finally killed it a few years ago. Sad to see these old beauties ...

They are pretty leafy Rosie...but not excessive.
To much nitrogen in the feed can produce over leaf production...but as you’ve got flowers coming don’t worry.
Feed with a high potash feed...tomato feed is ideal. This will help with the fruit production.

I Would remove those two bottom branches too. Then the tree can put all its strength into the top of the tree where you want two more layers. There’s always a chance of a problem when replanting same species of fruit trees.
Peaches themselves can be susceptible to Peach Replant disease.
If you can move to a different site it would always be preferably.

The most common cause of yellow leaf in figs is water. They need plenty of water...but do not like sitting in water. So they need very well drained soil....think about the rocky ground that is their natural habitat ....but also regular watering. Also..they should be restricted on feed and root run.....

I’ve tried to check on this one and all I can find is to take cuttings from the tree in late summer and root them immediately with a rooting hormone in sandy compost.
Those shoots should be fine in that case.
I assume from this that dormant cuttings will not take.

Leaf curl as you say jmcginnis.
If you can remove the worst affected and burn them it will help control spore spread. Clear all dropped leaves . Next spring if you can rig up some form of rain cover for the period from bud break to petal fall you will get much better control of the problem.

The shrivelling of those leaves could be from a number of causes. Over or under watering a young tree can affect it this way...the affected area will recover. Canker .....check for any sign of a lesion just below the affected area. Fungi related to Brown Rot can also produce this effect. Here Sprays...

I’ve found it best to thin the fruit out to singles ....you finish up with much larger fruit and less stress on the tree. If you can prop the branches I would. Pears are much slower to come into fruit so don’t worry about that. It used to be said that you planted a pear tree for your grandchildren.....
