Drying methods

Hi...I am a new member and very new at blogging so forgive me if I ask something that I should have found somewhere else on the blog.

I wondered if someone would have advice on how to best preserve foods when technology and money are scarce... I am supposed to go to Nicaragua to help with a gardening project down there and I will be in charge of food preservation - I must have drawn the shorter stick... :shock: Do any of the members have advice on a book I could read that would offer tips on assembling drying racks, food preservation that does not involve canning - too expensive - and any methods that would allow low income communities to preserve a bumper crop?

I hope you have a few weeks to prepare. You'll definitely want to take at least TWO copies of this book with you, having *already* studied it ahead of time:

There is a foreword to the current edition by Deborah Madison, "In the Presence of the Past"; the foreword to the first edition (1992) was written by Eliot Coleman, "The Poetry of Food."

Thank you sooo much for the advice. I will immerse myself in the book. I am scheduled to leave only in July so I will be able to test what I learn.
