Why I over plant garlic

Today I planted another batch of sprouting garlic. By mid January or early February our garlic is pretty much spent. It is either dried out or sprouting. We plant 2x to 3x the amount that we expect to make mature bulbs. In mid January we start harvesting the garlic and use the plants like spring onions. The entire plant less the roots is used to season our favorite dishes. We harvest the weakest plants early and allow the largest plants to form mature bulbs. This way we eat garden grown garlic almost year round!

They should grow rapidly when mild weather comes and will provide tasty garlic while you wait on the 2014 bulbs to form.
